Food products can be preserved in refrigerated environments by using refrigerators of different sizes according to the room volume.
In case of transport, food products are refrigerated thanks to the installation of refrigeration systems inside the vehicle (truck or van).
A longer food preservation can be achieved by means of low temperatures.
Cold temperatures slow down enzymatic and chemical reactions taking place in food and can even stop them. Unfortunately enzymes are not completely deactivated and when the temperature increases they resume their activity.
Slowing down the enzymatic action results in slowed development of microbes.
Food products can be preserved at low temperature provided that:
- they are in perfect hygienic conditions;
- no increase in temperature takes place during preservation.
Food products preserved in cold conditions can be refrigerated or frozen.
